Weed Festival Comes to Järva County (2)

The Koigi municipality in Järva County in central Estonia is hosting a two-day "weed festival" that focuses on locally sourced, natural and healthy food.

Today's events will focus on school cooks and students, with renowned chef Dmitri Demjanov demonstrating various options for making school food healthier and tastier and the students will spend their lunch break at the pop-up restaurant in the Koigi manor, ETV reported today.

On Saturday, there will be various workshops and lectures on how to use Estonian weeds like aegopodiums (ground elder), dandelions, nettles, thistles and cowslips as ingredients.

Food specialists will introduce weed smoothies and raw food and a green exchange of plants will also take place.
